What Are Shirataki Noodles?
Shirataki noodles are Asian-style noodles made from konjac yam root and sometimes other ingredients like water, tofu, and added nutrients. These vegan noodles (sometimes called Miracle Noodles for their lack of calories) were traditionally only used in Asian cuisine, but you can use them in any noodle dish for a low carb, low-calorie pasta substitution!
Although you can use these low calorie noodles in nearly any dish that calls for pasta, ramen, or rice noodles, there will be some differences when you make the swap.
The texture will be more slippery and never like the texture of grainy, whole wheat noodles. Also, the preparation is slightly different than that of wheat noodles. You’ll likely have to rinse the shirataki noodles and then cook them in boiling water for a short amount of time.
